CHEMICAL AND BIOMOLECULAR SCIENCES

The Section research interests concern the acquisition of new knowledge in chemistry, biochemistry and food analysis of agri-food systems, including aspects related to the development of new methodologies. Particular attention is paid to the implementation of innovative methodological approaches aimed at describing the structural modifications and the structure / function relationships in molecules and macromolecules even within complex matrices; the isolation, synthesis and characterization of biologically active substances of various chemical nature; the application of advanced thermal investigation methods; to the development, application and validation of advanced methodologies in the field of electrochemistry and instrumental sensory analysis. Overall, the activity of the Section intends to integrate knowledge and methodological approaches for solving current problems in the sector on a molecular basis.
