Chiriotti award for the best poster on the innovative technologies in cereal science
Prof. M. Ambrogina Pagani was awarded with the Chiriotti prize for the best poster for the “Innovative technologies in cereal science. The work - entitled “Buckwheat bran modification induced by (bio-)technological treatments and effect on baking quality” (authors: Miriam Zanoletti, Alessandra Marti, Maria Ambrogina Pagani, Stefano Renzetti) - was carried out during the PhD program of Dr. Zanoletti, in collaboration with TNO (Zeist, Paesi Bassi).
The research focused on the exploitation of superheated steam treatment to improve the technological performance of buckwheat bran. The prize was conferred during the 11° Conference of the Italian Associations for Cereal Science and Technology (AISTEC) held in Rome from 22nd to 24th November 2017.
